Pasta Dodlies from my town


I still remember my mom making spaghetti at the kitchen table and my grandmother melting the butter and pouring it over them.

Their taste has been engraved in my taste buds and every time I taste it I enjoy it and go back to my childhood.

They may be the simplest spaghetti in the world but for me they are the best!

They are made in every house in my town and fill those who taste them with flavor and memories!

My mom made them one by one but to save time, I cut them like linguine and shape them a bit so they are round.


Ingredients for 4 servings


630g all-purpose flour

380ml room temperature water

1 teaspoon salt

200g quality butter

Grated dry Mizithra (this is the cheese we use but any cheese for pasta will do).


Place the flour, salt and 2/3 of the water in the mixer bowl. We knead with the hook and add as much water as necessary to achieve a soft dough that does not stick to the hands. We knead for 5'.

Kneading can be done with a mixer or by hand.

Let the dough rest for at least 1 hour.

Divide the dough into 4 pieces.

Any piece of dough that we do not use and the prepared spaguetti need to be covered with a kitchen cloth so that they do not dry out.

Roll out the dough on a floured surface into a 4mm thick rectangle.

Flour the sheet well and roll it from the wide side.


Transfer the roll to a cutting board and cut into slices about 8-9mm thick. We open all the strips so that they do not stick. We take a strip, remove all the flour and transfer it to a surface without flour. We shape it until we form a uniform cord about 5-6mm thick. If it's too big to handle, we cut the cord in two. I make spaghetti about 20-25cm long.












Place the prepared spaghetti on a tray, sprinkle with plenty of flour and mix lightly so that it goes everywhere and does not stick.

Bring plenty of water to a boil in a large saucepan. When it starts boiling add a tablespoon of salt and half of the spaghetti (which we have shaken a little to remove excess flour). Stir often so they won't stick.

At the same time, we melt half the butter in a saucepan.

We let the spaghetti boil for 3' (our moms left it for much longer but I think 3' is enough time).

Remove the pasta with a slotted spoon and spread it out on a tray. Sprinkle with plenty of cheese and pour the melted butter over them.

We do the same process with the other half of the spaghetti and spread them on another plate.
