Caesar salad EN
Very tasty salad that when combined with chicken, makes a complete meal.
It is an easy recipe and if we have prepared the sauce, the croutons and the chicken in advance, in a few minutes we will have it ready for our table.
To make parmesan flakes we need a piece of parmesan and a potato peeler and we just cut small slices from the cheese.
Ingredients for 4 people:
1 large or 2 small lettuce washed, dried and cut into bit sized pieces
2/3 cup parmesan flakes
For the croutons:
100g sliced bread cut into small pieces
2 tablespoons olive oil
1 big garlic clove finely minced
2 tablespoons grated Parmesan cheese
Sauce:
1 cup mayonnaise
60ml grated Parmesan cheese
3 tablespoons lemon
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
2 garlic cloves finely minced
Optionally:
1 chicken breast of about 500g
2-3 tablespoons Cajun seasoning
3 tablespoons olive oil
Preheat the oven to 170°C.
Spread the pieces of bread on a pan.
In a small bowl, mix the oil and garlic. Pour this mixture over the bread.
Sprinkle the Parmesan and toss until evenly coated.
Bake for about 15 minutes, stirring as needed to crisp up the bread.
For the sauce, put all the ingredients in a jar with a lid. Close it. Shake well and store the sauce in the refrigerator.
Chicken:
We divide the breast into 2 parts.
Sprinkle with some oil and the cajun mixture.
Heat a small pan (with a metal handle to put it in the oven for a while) and add the remaining oil.
Sauté the chicken on both sides and transfer the pan to a preheated oven at 180°C for 10' or until cooked.
Let the chicken cool down.
In a large bowl, place the lettuce, cold chicken, croutons and Parmesan cheese flakes.
Add the sauce and toss gently.
