Mollete bun

 



In Greece we believe that Spaniards eat Churros for breakfast but we are wrong.

The most typical breakfast for Spaniards is bread with oil and tomato. Of course many top it with jamón and cheese but the most common combination is bread, oil and tomato.

In Andalusia they prefer this breakfast with their own bun, the mollete, which is a round soft bun cut in half and lightly toasted. Many times they put on garlic flavored oil and freshly grated tomato or even salmorejo.

At home we love this breakfast so much, so I decided to make molletes. We all prefer it almost every morning !!

It is a healthy breakfast but also very tasty. It looks simple but it wins you over with its taste.

Making the bread is simple and we must remember that it must take no color.

Store them in a tightly closed bag in the refrigerator for several weeks.

To prepare our breakfast we must cut the bread horizontally in the middle and definitely toast it! When it is toasted, add some oil, some freshly grated tomato and some salt.


A tostada, as the Spaniards call this kind of breakfast, combines perfectly with hot coffee or a glass of natural orange juice.


Ingredients for 10 molletes:


500g flour  all-purpose flour

320ml lukewarm water

1 teaspoon salt

5g dry yeast


Melt the yeast in lukewarm water and leave it for 5' to activate.

Put the flour and salt in the bowl of the mixer and mix them.

Combine the two mixtures and knead in the mixer or by hand for 5' to make the dough soft and slightly sticky.

Leave the dough in a bowl that has been sprinkled with some flour to rise for about an hour.

Divide the dough into 10 balls and leave them covered for 10' to rise.


Press the balls with our hands until we achieve oval pies. Line two pans with parchment paper. Lightly flour the parchment paper and place the buns on top. Lightly flour the buns. Cover them with parchment paper and a towel and leave them to rise for an hour. I bake the rolls on baking plates but they also bake well in simple pans.


Preheat the oven to 200°C and put in a bowl of water, this helps to bake the buns properly.

Place the puffed buns in the oven and sprinkle with some water. Bake for exactly 10'. We do not want our buns to turn brown.

Remove the buns from the oven and leave them to cool on a cooling rack.
