Fried rice EN



Delicious as a side or even a main meal, this Asian dish is one of my favourites! However, it took me a while to figure out how to cook it properly.

The rice has to be cooled and dry, so we boil and dry it hours before.

We can put the vegetables we want and we have to sauté them first.

The egg for me is a key ingredient.

Prawns or chicken go well with this dish.

The ingredients that can be used are:

Peas, chopped onion, chopped carrot, chopped cabbage, mushrooms, broccoli and in general any vegetable that we like.

The method and time of cooking the rice is only for the basmati rice. If we use any other rice, we will follow the instructions on the package. The oven drying applies to all varieties of rice.


Ingredients for 4 people:


2 cups basmati rice (1 cup = 240ml)

3 cups hot water

2 tablespoons olive oil

Salt


4 eggs

300g boiled, frozen or canned corn

2 tablespoons sesame oil

3 tablespoons olive oil

1/4 cup soy sauce

3-4 finely chopped chives



Rinse the rice in a strainer until the water runs clean.

In a small saucepan, sauté the rice with the olive oil for a few minutes.

Add the hot water and salt.

Once it boils, cover the pot, turn off the heat and leave it on the stove for ten minutes. If we have a gas hob just lower it to minimum.

Spread the boiled rice on a tray lined with parchment paper. Bake in a preheated oven at 140°C for 15'. Stir the rice with a wooden spatula and continue cooking for another 15'. Let it cool completely.

Heat a wok or a large frying pan.  Add some oil and the eggs. Stir so that the eggs are cooked and divide them into pieces.

Leave them on a plate and keep them warm.

Add some more oil to the wok and fry the rice. The rice should brown up a bit.

Stir in corn and eggs and continue sautéing to heat them as well.

Add soy sauce and the aromatic sesame oil. Cook for a few more minutes.

Serve the fried rice hot and decorate with chives.
