Mushroom soup EN


 It's the most delicious and easy mushroom soup.

Perfect for dinner but also for lunch.

We can make it with any mushrooms we like.

For me, paprika is a very important ingredient. I use a smoked sweet paprika.



Ingredients for 3-4 servings:


500g of sliced ​​mushrooms.

2 tablespoons oil

2 medium onions, finely chopped

2 garlic cloves finely chopped

1 1/2 - 2 tablespoons smoked sweet paprika

1 teaspoon dried thyme or 2-3 sprigs fresh

1 teaspoon dried oregano

Juice of half a lemon

3 tablespoons soy sauce

Salt

Pepper 


2 tablespoons butter

3 tablespoons all-purpose flour

1 cup of milk

3 cups of water or vegetable broth (I prefer water)


4 tablespoons Greek yogurt

Chopped parsley



Melt the butter in a small saucepan and sauté the flour in it until it acquires some color.


Add the milk in 3 portions, stirring with a whisk to combine the mixture. Add 2 cups of water and continue stirring until it boils. Cover the pot and keep the mixture warm.


Put the oil in a large saucepan and sauté the garlic and onion over medium heat until the onion is almost cooked.

Add the paprika. Sauté it for a very short time because it burns easily and becomes bitter. 


Add  mushrooms and sauté until all the liquid is almost evaporated. Add 1 cup of water, thyme, oregano, soy sauce, lemon juice and let the soup boil for 5'.

Add the mixture of flour, milk and water to the soup, season with salt and pepper and boil for 3'.


Serve the soup in a deep bowl with a tablespoon of Greek yogurt, chopped parsley, and sweet or hot paprika.
