Cheese croquettes EN



 Cheese croquettes, crispy on the outside and fluffy on the inside with just two ingredients!

We can use the cheese we like the most but it has to be a dry one, like Parmesan but we can add a small amount of a soft cheese.


Ingredients:

150g of very fine grated cheese.

(I usually put 100g of Parmesan and 50g of feta "the feta must be in small quantities because it has a lot of moisture")

85g egg white



Mix the cheeses with the egg white. We need to have a dough that can be molded. If our dough is very wet we add some Parmesan (not feta).

Shape about 9 balls.


If we want, we cover them with breadcrumbs, but they don't come out as round as the others. However, they are crispy.

Fry them in abundant oil over medium heat.


Serve them immediately because they deflate while cooling!
