Sun dried cherry tomatoes EN

 


This year, for the first time, I made sun-dried cherry tomatoes.

It is a very easy and fast process and the final product can be used in cooking but also as a snack!!

I used cherry tomatoes but the method will work for all kinds of tomatoes.


Ingredients:


Cherry tomatoes

Salt

Olive oil

garlic clove

Oregano

Thyme


Wash the cherry tomatoes and dry them.

Cut them in half and spread them with the cut side up in a pan.


Lightly salt them and cover them with a tulle.


Leave them to sun dry for about 3 days. If we use bigger tomatoes they will need more time. On the last day we turn them with the cut side down.

Wipe the salt from their skins and store them in a glass jar with some garlic, thyme and oregano. Fill the jar with olive oil.


Use them in food or as a small appetizer.
