My mother's Chicken salad EN


One of my mom's most special recipes!

When you see the chicken salad you think it will have an ordinary taste but it pleasantly surprises you! Every bite is a surprise! I think I have not met a person who does not like it! Even a friend of ours who hates mayonnaise loved it !!


Ingredients:

1 chicken about 2 kilos

1 onion

5-6 grains of allspice

5-6 grains of black pepper

1 tablespoon butter

Salt


1/2 kg mushrooms diced in medium cubes

2 tablespoons butter

2 green peppers diced in small cubes

200g coarsely grated provolone cheese

2 tablespoons mayonnaise

Salt Pepper,


Curry

Ground allspice

Sweet paprika


1 jar mayonnaise 650ml

2 tablespoons ketchup

1 tablespoon Dijon mustard


1 1/2 - 2 cups coarsely chopped walnuts


2 hard-boiled eggs cut into thin slices

2 grated carrots


Boil the chicken in a large saucepan with plenty of water. Skim and then add the onion, allspice, peppercorns, salt and a tablespoon of butter. Simmer for 1 1/2 hours.

Take out the chicken (keep the broth for risotto or chicken soup), leave it to cool and shred it. We only want the meat, not the skin.


Saute the mushrooms with the 2 tablespoons of butter.

Add to the cold chicken 1/4 of the cup of its broth (cold), the cold mushrooms, the peppers, the cheese, 2 tablespoons of mayonnaise, the spices and mix. It is good to leave the mixture in the refrigerator for a few hours.


Mix the mayonnaise with the ketchup and mustard and leave it in the fridge for 4 hours.

Place the mixture on a plate like a hill.

Spread the mayonnaise mixture on top (it is not necessary to put it all) and sprinkle the nuts on top.

Garnish with the grated carrot and the boiled eggs and place in the fridge.

Serve it cold with the mayonnaise on its side for anyone who wants some more.
