Chicken quesadillas EN


 Quesadillas in Spanish means "Cheese".

Very good idea for dinner.


Ingredients for 4 servings


3 tablespoons  Olive oil

1 green pepper cut julienne (thin oblong pieces)

1 red pepper cut julienne

1 yellow pepper cut julienne

1 large onion chopped julienne

500gr chicken breast cut into long narrow pieces

1 teaspoon sweet paprika

1/2 teaspoon cumin

1/2 teaspoon oregano

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper

300gr grated Gouda 

300gr grated cheddar

1 pack of medium Mexican Wheat Tortillas

1 avocado cut into thin slices

1-2 chopped green onions

Salt

Pepper

Heat 1 tablespoon oil in a large pan over medium heat.

Add peppers and onion and season with salt and pepper. Cook for 5'. Transfer to a plate and keep warm.

Heat another tablespoon of oil over high heat and cook the chicken until white.

Add the spices and season with salt and pepper. Cook for a few more minutes until fully cooked. Transfer to a plate and keep warm.

Place a tortilla in a wide pan with a drop of oil. Place over one half of the tortilla a pinch of each cheese, chicken, peppers, a few chopped onions and on top again cheese. 


Fold the tortilla in half and bake on low heat. I close the pan with a lid for a few minutes to melt the cheeses. Flip over the tortilla to cook the other side.


Remove from the pan carefully. Open the tortillas, add the avocado and cut in half.
