Homemade Granola EN
My friend Genevieve gave me her tasty granola recipe some years ago in Spain.
Genevieve does not eat any wheat and generally gluten, thats why her recipe was with quinoa flakes. I changed the recipe to my girls' tastes, added oat flakes and more dehydrated fruit. My food dryer helped me and gave me the opportunity to dry whatever fruit I want. Bananas, pears and kiwis are our favorites. My girls do not change it with anything and when they are here I make it very often. The dose is for many mornings but does not stay in our house for long.
Ingredients:
1 package (100g) rice cakes
2 cups (1 cup is 240ml) oat flakes
2 cups row almonds, hazelnuts or cashews coarsely chopped (I prefer almonds)
140 g butter
5 tablespoons olive oil
2/3 cup honey
1 teaspoon cinnamon
6 - 7 bananas and 4 kiwis in the dryer (optional)
1 package of dried cranberries (230gr)
Preheat the oven to 150°C
Brake the rice cakes into small pieces in a large bowl. Add almonds and flakes
Melt the butter in a small saucepan, remove from the heat and add the honey and cinnamon. Mix well and pour the liquid mixture into the mixture with the rice cakes.
Spread them on a bake tray with a baking sheet on it and bake them in the oven for 15'. Stir the mixture and bake again for another 15'. Stir and bake for 10'.
Get the granola out of the oven and add the fruits. When it's completely cold store it in a jar or in a zip bag.
