Caramel sauce EN



My mom made this caramel sauce for us many wears ago and we were impressed!

It is the perfect caramel flavor.

Velvety caramel flavor with a slight vanilla aroma.

Perfect for ice cream, cakes, even yogurt or on top of cakes or waffles!

It's always in my fridge and the whole family honors it.



Ingredients


3 cups of sugar (1 cup = 240ml)

3 tablespoons glucose

100 ml of water

660ml whipping cream

2 tablespoons vanilla

1/2 teaspoon salt


In a large and deep saucepan put the sugar, glucose and water over high heat and stir to wet the sugar. Once it boils, close the lid and boil over medium heat for 2 '. We do this so that the sugar melts well and there are no crystals left inside. After 2' we check if there are any crystals and if so we do the same for 1' more.

Cook the caramel (do not mix it with the spoon) until the caramel is golden brown. Be careful because the caramel is at a very high temperature and burns.

While the caramel is being made, heat the cream in a saucepan or in the microwave. We do this so that the caramel does not rise too much when we add the cream.

When the caramel is ready, remove the pot from the heat and carefully add the cream (the mixture rises a lot).




With a whisk, stir the caramel so that it melts and mixes well with the cream.

Add the vanilla and the salt.

If necessary, return the pot to the fire for a while.

Put it hot in jars and when it cools store it in the fridge for many months.
