Pita bread
Pita bread is essential for souvlaki in Greece. Outside of Greece I have not been able to find pita bread like those in Greece. But it is very easy to make!!
We can freeze it and use it when we need it.
Ingredients for 6-8 pitas:
500g all-purpose flour
300g lukewarm water
1/2 teaspoon sugar
1 sachet (8g) dry yeast
11g salt
Some flour to shape them
Oil
Some water
We put the lukewarm water in the mixer bowl, add the sugar and mix. We add the yeast without stirring (we want it to stay on the surface, and see it rise). In 5' it should have foamed (if it doesn't foam, discard the mixture and try with another yeast).
Add the flour and knead in the mixer or with our hands for 5' until we have a soft dough. We add the salt and continue kneading for another 5'.
We divide the dough into 6 balls of 135g or 100g each depending on how big we want them.
We place them on a floured baking tray at a certain distance from each other because they will rise.
We preheat the oven to 30°C and turn it off. We place the tray in the oven covered with film. Let the dough rest for 45' - 1 hour.
Preheat a large, deep skillet with a lid over medium heat. We must have some oil and a bowl of water near us.
We open each ball into a thick sheet with our hands and create dents on its surface with our fingers.
We grease the pan with some oil and carefully place the dough inside. Add a tablespoon of water and immediately close the lid. Cook for a few minutes over medium heat until the bread puffs up and the base is golden. We turn it over, add half tablespoon of water and bake for a few minutes more.
We continue like this until all the breads are cooked.
If we put them in the freezer they must be completely cold and when we take them out we must defrost them and heat them in a pan for a few minutes.
