Onion chutney
Chutney is a sweet and sour or spicy jam that goes perfectly with cheeses, hams or even meats.
With a chutney in our fridge we can quickly prepare a board of cheeses along with fruits and nuts.
The chutney will keep for a long time in the fridge because of the sugar it contains and it is easy to prepare.
Ingredients:
80ml or about 6 tablespoons of olive oil
900g peeled and sliced red onions
4 garlic cloves, finely minced
85g brown sugar
15g molasses
2/3 cup or 160g balsamic vinegar
1/2 - 1 tsp chili flakes or 1/4 - 1/2 tsp hot paprika
Salt
Heat the oil in a large frying pan and sauté the onions over medium heat for about 10'. If we see that the onion dries out a lot during cooking, we add 2 tablespoons of water and mix.
Add garlic and chili flakes and continue to sauté for about 5 minutes. We add the salt.
Add the sugar and molasses and continue cooking for another 5 minutes.
Add the balsamic vinegar and continue cooking until it evaporates. Turn off the heat and let it cool down.
We transfer the chutney into a jar and store it in the fridge.
