Glyko Grape EN
The grape "glyko" is my husband's favorite and this year he brought me 2.5 kilos to prepare it. It's not the easiest dessert, but how can I say no?
The work that takes the longest is the extraction of the seeds. Everything is easier afterwards.
If the grape skins are as hard as the ones I had, we will let them boil until the syrup sets. However, if their skin is thin, we must remove them when they are ready (boiled, tender) and add them when the syrup has set.
Ingredients:
2 kg of grapes
1 kg of sugar
1 cup of water
Juice of 1 lemon
1 tablespoon of corn syrup
1 tablespoon vanilla extract
Wash the grapes well and carefully remove them from their clusters so that they do not break.
Remove the seeds with a hair pin. They usually have 4. However, even if we forget some, they will come out during the boil and we can easily remove them.
Place the grapes and the sugar alternately in a large pot. Add the water and put the pot in the fridge overnight. We want all of your liquids to drain and the sugar to melt.
The next morning, heat the pot first over low heat and then over medium heat.
Boil the glyko over medium heat for about 45 minutes or until the syrup sets.
I left the grapes in the pot for 45 minutes of boiling, but we must taste them from time to time and if they are tender, carefully remove them from the pot and put them back in the syrup when ready.
To see if the dessert is ready, we will put a small amount on a small plate and let it cool. In this way we will see if our syrup has set.
Let the dessert cool in the pot and occasionally move it carefully. This way the grapes are filled with syrup.
Fill jars with the dessert and put them in the refrigerator where they can be kept for many months.
