Strawberries Glyko EN
The "spoon glyko" is very common in Greece.
The spoon sweet is made with season fruit in syrup. Almost every fruit is made (glyko) and also some vegetables like eggplant and tomato.
My grandmother always had to have glyko in case someone came to visit. She even had the right utensil to serve it. I also have glyko at home always!!
Now we combine it with yogurt or ice cream or on top of other sweets!
It is perfect for the Cheesecake!!
1 kg strawberries of medium size and not very ripe
1/2 cup of lemon juice
1 kg of sugar
1/2 cup of water
Wash and cut the green leaves of the strawberries.
Put them in a bowl and add the lemon juice. Leave them in the fridge for 3 hours.
In a large pot (we need a large saucepan because the dessert makes a lot of foam) put the sugar and water over high heat and stir until melted. Cover with the lid and boil over medium heat for 2' so that the sugar melts well. Open the pot, add half of the strawberries and let them simmer for 4'. Carefully remove the strawberries and leave them in a colander.
Repeat the same process with the remaining strawberries and leave them in the colander.
Boil the syrup and what has fallen from the strawberries over medium heat for 3-4 minutes and remove the foam.
Take off the heat and remove the foam well.
Carefully add the strawberries to the syrup, continuing to remove the foam. Shake the pot 3-4 times until the dessert cools down so that the strawberries fill with syrup and have volume.
Fill jars with the glyko and store them in the refrigerator for months.
